Shrimp and Scallop Stir-Fry
Quick, easy...and very tasty! I thinly sliced a Poblano chili and cooked it with the other veggies- it added a nice background,
Ingredients
  • 2 tablespoons butter, divided
  • 1 pound fresh asparagus, cut into 2-inch pieces
  • 2 cups sliced fresh mushrooms
  • 1 small onion, sliced
  • ½ pound medium raw shrimp, peeled and deveined
  • ½ pound raw scallops
  • 1 tablespoon dried parsley
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons lemon juice
