Ingredients
  • ¼ red onion
  • 1 large tomato (about 100g)
  • ⅓ cucumber
  • A large pinch of fine sea salt
  • 20 coriander leaves
  • Juice of ¼ lime
Steps
  1. Slice the red onion into fine strips. Place in a small bowl and cover with cold water.
  2. Halve the tomato, remove and discard the seeds, then slice the flesh into thin strips and place in a large bowl.
  3. Slice the cucumber in half lengthways and carefully scoop out the seeds, using a teaspoon. Slice the cucumber into thin crescents and add to the tomato.
  4. Drain the onion, pat dry with kitchen paper and add to the tomato and cucumber.
  5. Add the salt, mix well and leave to stand for 5 minutes to allow the juices to mingle.
  6. Shred half of the coriander leaves, keep half whole.
  7. Add all the coriander to the salad, dress with lime juice, mix well and serve.
