Pumpkin pie chia seed pudding

Ingredients
  • ¼ cup chia seeds
  • 1 cup pumpkin purée
  • 1½ cup unsweetened almond milk
  • 2 T maple syrup
  • 1 tsp vanilla extract
  • ½ tsp pumpkin pie spice
Steps
  1. Combine all ingredients in bowl, make sure they're mixed really well.
  2. Chill in fridge for at least 30 minutes.
  3. Top with pumpkin seeds or cocao nibs. Enjoy!
