Peanut Stew with Spinach and Miso
Ingredients
  • 3 tablespoons extra-virgin olive oil
  • 1 yellow onion, chopped
  • ¾ teaspoon fine-grain sea salt, plus more to taste
  • 1 ½ cups diced carrots
  • 3 tablespoons red curry paste
  • ½ cup all-natural peanut butter
  • 1 (15-ounce) can crushed tomatoes or crushed fire-roasted tomatoes
  • 4 cups water
  • 8 ounces frozen spinach, chopped
  • 2 tablespoons miso
  • 1 lime, cut into 6 wedges, to serve
  • Chopped cilantro, cooked brown rice, or toasted peanuts, to serve (optional)
