  • ½ to 1 teaspoon dried oregano
  • ½ to 1 teaspoon dried basil
  • 2 cloves garlic minced
  • ¾ cup bell pepper seeded and small diced
  • ¾ cup red onion small diced
  • 1 cup peas
  • ¼ cup olives
  • ½ teaspoon salt or to taste
  • 2 cups grape tomatoes halved
  • 2 8-ounce containters mozzarella Fresca (cherry size), drained
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh basil leaves for garnish
