Taco Stuffed Pasta Shells (Modified)
Ingredients
  • subheading: FILLING:
  • 1 pound lean ground beef (reduced from original recipe)
  • 1 small onion
  • 1 clove garlic (new) - minced
  • 1 envelope taco seasoning
  • 1 ½ cups chopped veggies (red, yellow or green peppers, corn, zucchini… whatever you have on hand)
  • ½ package (4 ounces) cream cheese, cubed
  • subheading: OTHER:
  • Cooking oil
  • 15 uncooked jumbo pasta shells (reduced from 24)
  • 1 can of Old El Paso Enchilda Sauce
  • 1 Cup grated cheddar and/or monterey jack cheese (I used about ½ to ⅔ of a cup)
  • Sour cream for serving
