Edamame Hummus with Sumac-Grilled Pineapple
Ingredients
  • 1 cup shelled edamame (I use frozen/thawed)
  • 1 cup canned small white beans (navy beans) rinsed and drained
  • 3 Tbsp. tahini
  • 2 small (or 1 large) garlic clove
  • 2 Tbsp. fresh lemon juice
  • 1 tsp. kosher salt
  • ½ tsp. ground cumin
  • ¼ cup extra-virgin olive oil, plus more for drizzling overtop
  • 6 oz. pineapple rings or spears
  • ¾ tsp. ground sumac, divided
  • For serving: warm pita, tortilla chips, or pita chips.
