Nourishing Homemade Chicken Stock (Bone Broth)
Ingredients
  • 1 Whole Chicken Carcass or bones from a rotisserie chicken or leftover roast chicken
  • 2 Medium Carrots roughly chopped
  • 2 Celery Stalks roughly chopped
  • 1 Large Onion quartered (you can leave the skin on)
  • 4 to 5 Garlic Cloves smashed
  • 1 Tablespoon Apple Cider Vinegar
  • 1 to 2 Bay Leaves
  • 10 to 12 Peppercorns
  • Fresh vegetables or aromatic vegetables like parsley, thyme, or rosemary sprigs
  • Enough water to cover the bones about 8 to 10 cups water or 2 to 3 quarts of water
  • Salt to taste optional
