Cinnamon Oat Muffins (No Flour or Refined Sugar)

  • INGREDIENTS
  • 2 ½ cups old fashion oats (will be divided)
  • 1 cup applesauce
  • 2 eggs
  • ⅓ cup honey
  • ¾ cup unsweetened almond milk ( or regular dairy )
  • 1 tsp vanilla
  • 2 tsp baking powder
  • ½ tsp baking soda
  • dash of salt
  • 1 tsp ground cinnamon
  • subheading: FOR TOPPING:
  • 2 to 3 TBSP old fashion oats
  • 1 to 2 tsp ground cinnamon
  • INSTRUCTIONS
  • Preheat oven to 350 degrees. Grease a 12 count muffin pan or line with liners.
  • Take 1 ½ cup of old fashion oats and place in food processor or blender. Grind mixture until it's finely ground and almost resembles flour. Set aside.
