  • 3½ lbs / 1.5 kg boneless pork country ribs (see notes)
  • 2 tbsp / 30 ml avocado oil or pork lard
  • ⅔ cup / 160 ml unsweetened apple juice or apple cider
  • 3 tbsp / 45 ml apple cider vinegar, divided
  • 2 small - medium apples
  • 1 medium yellow onion
  • 2 large sprigs of fresh rosemary
  • 4 large sprigs of fresh thyme
  • 1 tsp / 5 g fine sea salt
  • subheading: for the herbed whipped sweet potatoes:
  • 2½ lbs / 1.1 kg white sweet potatoes (about 2 large)
  • 2 tbsp / 30 ml reserved rendered fat from the pork
  • ¼ cup / 60 ml coconut milk (see notes)
  • 1 tsp / 5 g fine sea salt
  • 1 tsp minced fresh rosemary or ½ tsp dried rosemary
  • 1 tsp fresh thyme or ½ tsp dried thyme
