Potato broccoli cups
Ingredients
  • 2lbs yellow potatoes, washed and cut into large cubes
  • 8 oz @cabotcreamery yellow cheddar, shredded
  • 2 crowns broccoli, steamed and roughly chopped
  • 2 eggs
  • ½ cup heavy cream, milk or potato cooking water
  • @lactaid sour cream to serve
  • Salt and pepper
  • Olive oil spray or cooking spray to grease muffin tray
  • note: you can use a standard or mini muffin tray for this recipe!
