  • 2 tablespoons butter
  • 1 tablespoon canola oil
  • 1 onion, chopped
  • 2 carrots, chopped

  • 3 garlic cloves, minced
  • 1 tablespoon minced fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • 2 tablespoons tomato paste
  • 1 teaspoon sweet paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup white wine
  • 5 cups chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon fresh lemon juice
  • ¼ cup heavy cream
  • 1 lb salmon (I used wild sockeye), seasoned with salt and pepper, cooked and flaked
  • 2 tablespoons fresh chives, finely chopped, for serving
