PAT’S CARROT , LENTIL AND CORIANDER SOUP
COOKED IN THE INSTANT POT EVO PLUS
Ingredients
  • 2 packs Asda base mix frozen veg
  • 1 onion
  • 1kg carrots
  • 2 large handful red lentils
  • 4 teaspoons ground coriander
  • 15 gms fresh coriander chopped
  • Garlic paste or fresh garlic chopped
  • 2 knorr chicken stock cubes dissolved
  • salt
  • TO MAKE IT SPICY ADD
  • 2 teaspoons smoked paprika
  • ½ to 1 teaspoon of chilli powder (depends how spicy you like it )
Steps
  1. take 3 of the carrots clean and grate them put them in the instant pot grey steamer container for 3 mins on High Pressure then release the pressure and put to one side.
  2. peel and chop the remainder of the carrots
  3. finely chop the onion
  4. dissolve the stock cubes in boiling water
  5. put about 1 pint cold water at the bottom of the inner pot
  6. put the base mix in then the onion, ground coriander , ( smoked paprika and chilli piwder if making it spicy ) and garlic stir through
  7. put the red lentils on top
  8. add the chopped carrots
  9. add the dissolved stock cubes
  10. put cold water in to just below the carrots
  11. Set the Instant Pot to High Pressure 10 mins cook time
  12. let it go to NPR
  13. Add the chopped coriander and blend smooth. After blending stir through the grated carrots.
