Dua Gia (Pickled Bean Sprout Salad)
Ingredients
  • ⅔ cup granulated sugar
  • 1½ teaspoons fine sea salt
  • 1 cup distilled white vinegar
  • 1 pound bean sprouts
  • 1 carrot, peeled and cut into matchsticks
  • 5 small or 4 medium scallions, green parts only, cut into 1½-inch lengths (see Note)
