Pressure Cooker Cabbage Soup with Kielbasa
Ingredients
  • 2 pounds kielbasa, sliced
  • 3 tablespoons olive oil
  • 1 cup onion, chopped
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 head cabbage, chopped
  • 3 cloves garlic, chopped
  • 1 ½ teaspoons caraway seeds
  • 1 ½ teaspoon fennel seed
  • 2 tablespoons Dijon mustard
  • 6 cups chicken stock (I used 8 cups broth)
  • ¼ cup potato flakes for thickener
  • Salt and pepper to taste
  • ¼ cup potato flakes (optional as a thickener-add at the very end and stir)
Steps
  1. Press Soup/Stew button (or 10 minutes high pressure)
  2. Heat oil in pot and add kielbasa; brown for 3 minutes.
  3. Add onion, carrot, celery, cabbage, garlic, caraway and fennel. Saute for 5 minutes.
  4. Add chicken stock and mustard.
  5. Place lid on pressure cooker and lock, turn pressure valve to CLOSE.
  6. Once the timer reaches 0, switch the pressure to release valve to OPEN.
  7. When steam is completely released remove lid.
  8. Add salt and pepper to taste. Top with fresh parsley. (optional)
