Slow Cooker Green Chile Enchilada Soup (Gluten, Dairy, Egg, Peanut & Tree Nut Free)
Ingredients
  • 16 oz green enchilada sauce
  • 1 can white beans, drained and rinsed
  • 1 cans black beans, drained and rinsed
  • 2 boneless skinless chicken breasts
  • 7 oz diced, fire-roasted green chiles, mild
  • 1 can (10.5 ounces) fire-roasted, diced tomatoes
  • 2 teaspoons ground chili powder
  • 1 Tablespoon ground cumin
  • Salt and pepper
  • 2 cups chicken broth (be sure it's wheat free--some aren't)
  • 4 ounces dairy-free cream cheese, softened (Tofutti or Daiya or Go Veggie)
  • 2 to 3 Tablespoons fresh cilantro, for garnish
  • Optional add-ins: dairy-free sour cream, fresh lime, tortilla chips
