Paul P. H. Mak recipe (from 80 year old Korean friend)
Ingredients
  • 2 chinese cabbage,
  • A lot of coarse salt,
  • ½ a radish,
  • 3 carrots,
  • 2 whole spring onion/scallion/green onion,
  • 1 small piece of ginger,
  • 5 cloves of garlic,
  • 1 cup of course chili powder or dried chili flakes or Sambal Olek,
  • 1 Tbsp. fish sauce or 100g or fine dried baby shrimps,
  • 2 Tbsp. sugar and 2 Tbsp. fine salt.
