The Best Chocolate Cake Recipe {Ever}

Obsessed with pears at the moment...especially pear cake. New favourite ingredients: fennel root and fish sauce. Also, gluten-free, though I do save recipes that aren't.

2 cups all-purpose flour

2 cups sugar

¾ cup unsweetened cocoa powder

2 teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon kosher salt

1 teaspoon espresso powder, homemade or store-bought

1 cup milk, or buttermilk, almond, or coconut milk

½ cup vegetable oil, or canola oil, or melted coconut oil

2 large eggs

2 teaspoons vanilla extract

1 cup boiling water
