Steamed Eggplant with Sesame and Green Onion
Ingredients
  • 2 medium eggplants, topped and peeled (scant 1 ½ lb/650 g)
  • 5 green onions, white and green parts, thinly sliced on the diagonal (¾ cup/70 g)
  • 1 tbsp/10 g mixed black and white sesame seeds, toasted

  • 2 ½ tsp mirin
  • ½ tsp sesame oil
  • 1 ½ tbsp light soy sauce
  • 2 ½ tsp rice vinegar
  • 1 ½ tsp maple syrup
  • 2 tsp peeled and finely chopped fresh ginger
  • 1 clove garlic, crushed
  • salt
