Spicy Black Bean and Corn Quinoa Burgers
Ingredients

  • 1 teaspoon extra-virgin olive oil
  • 3 ounces ( ⅔ cup) minced white onion (about ¼ of a large onion)
  • 5 cloves garlic, minced
  • two 15-ounce cans black beans, rinsed and drained, divided *
  • 6 ounces ( 1 cup) corn (I used canned corn)
  • ¼ ounce ( ¼ cup) minced fresh parsley
  • 3 tablespoons freshly squeezed lime juice
  • 2 tablespoons tomato paste
  • 2 teaspoons cumin
  • 1 ¼ teaspoons chile powder
  • 1 egg
  • 1 ½ ounces (scant ½ cup) rolled oats
  • 2 ounces ( 5/8 cup) oat flour
