Sticky Date Mug Pudding
Ingredients
  • 100g fresh dates, stoned, finely chopped
  • ½ tsp bicarbonate of soda
  • ½ cup (125ml) boiling water
  • 50g butter, melted
  • 2 eggs, lightly whisked
  • 1 cup (150g) self-raising flour
  • 12 cup (110g) brown sugar
  • 2 tbs milk
  • 1 tsp vanilla bean paste
  • ¼ cup (35g) pecans, chopped
  • Salted caramel topping, to serve
  • Chopped pecans, extra, to serve
