Stuffed Bell Peppers
Ground Turkey Stuffed Bell Pepper (R1 Approved) Prep Time: 10 Mins Cook Time:

Ingredients
  • 10 oz of Ground Turkey
  • 3 Garlic Cloves (minced)
  • ½ Cup of Chopped Onion
  • 3 Red Bell Peppers
  • Salt and Pepper
  • 1 Cup of Nutritional Stacy's Chicken Broth
  • 1 Tsp Cumin
  • 1 Tsp garlic powder
  • 1 Tbsp of Healthy Fat Oil (grapeseed, coconut or avocado oil)
Steps
  1. Pre-heat your oven to 400 degree's
  2. Start by adding your 1 tbsp of oil to your frying pan. Add the minced garlic and allow to cook until fragrant. Add the chopped onion and let cook for about 3 to 5 min or until the onion gets a little browned. Next add in your ground turkey along with the garlic powder, cumin, salt and pepper. Cook between 4 to 5 mins.
  3. Next you will add in ½ cup of the Nutritional Stacy's Chicken Broth as well as 1 cup of the Nutritional Stacy's tomato sauce. Mix well and let simmer for about 5mins.
  4. While that is simmering cut your washed red bell peppers in half lengthwise. Remove all the seeds. Scoop out your ground turkey mixture into each half of the bell pepper and top with Nutritional Yeast for that cheesy effect.
  5. Pour the remaining Chicken broth in the bottom of the baking dish and cover tightly with aluminum foil. Bake for 45min.
  6. Carefully remove the foil. Serve and Enjoy!!!

  • Total: 675 calories (1 serving = 337.5 calories)
  • ~You can eat 2 halves of the red pepper to equal one full serving of protein (if weighing protein to reach 5oz). This also heats up very well in the oven for leftovers if you want to make extra and freeze them for up to a week, place back in the oven (after being thawed) and re-bake for about 15min at 350 degree's.
