  • 360 g of flour
  • 40 g of wholemeal flour (optional, if not using, make with 400 g of white flour)
  • 320 g of water
  • 120 g of 1:2:2 levain
  • 8 grams of salt
  • 20 grams of olive oil
  • For national flours, it is worth mixing the water with the flour, cover and leave the autolysis process for at least 2 hours, in the video I didn't do this process because I used a flour that develops very well.
  • Add the levain, salt and finally the olive oil.
  • Start the process of 4 folds every 30 minutes.
  • Transfer to a greased teflon baking tray, cover with plastic and place in the fridge at 4 degrees for 12 hours. Second fermentation at room temperature for approximately 4 hours or until it is the ideal size for the chosen shape. I baked it at 170 degrees with the addition of steam for 20 minutes and at 195 degrees for 10 minutes to caramelize, on NC4. @nathionalcook. Incredible oven!
