Eggplant Meatballs [Vegan]
Ingredients
  • 1 chia egg (1 tablespoon chia seeds plus 3 tablespoons water)
  • 1 ⅓ cups white onion, diced
  • 1 rib celery, diced small (about ⅓ cup, optional)
  • 2 cloves garlic, minced
  • 2 unpeeled eggplant, diced into about 1-inch cubes
  • 1 cup cooked chickpeas
  • ⅓ cup parsley, chopped and loosely packed
  • ¼ cup tempeh bacon
  • ¼ cup quick oats
  • ¼ cup chopped fresh basil
  • 1 cup plain bread crumbs
  • ¼ cup nutritional yeast
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon liquid smoke (optional)
  • ¼ to ⅓ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ to ¾ cups vegetable broth, as needed
