Irish Soda Bread (from Nancy Davis)
Ingredients
  • 1 c. AP flour
  • 1 T. brown sugar
  • ¼ t. baking powder
  • ¼ t. baking soda
  • ¼ t. salt
  • 5 t. cold butter
  • ⅓ c. buttermilk
  • ½ c. raisins or currents
Steps
  1. In a small bowl, combine the dry ingredients (except raisins). Cut in butter with two forks or a pastry blender until crumbly.
  2. Combine egg & buttermilk; stir into crumble mixture until just moistened. Fold in raisins or currants
  3. Turn onto a lightly floured surface and kneed gently 6 to 8 times. Shape into a 5 inch round loaf. Place on a cookie sheet coated with cooking spray
  4. Using a sharp knife, cut a 1 inch cross about a ¼ inch deep on top of the loaf.
  5. Bake in 375 degree oven for 18 to 22 minutes or until golden brown. Cool on wire rack before cutting.
  6. Can double recipe for a larger loaf.
