Irish Soda Bread (from Nancy Davis)

Ingredients
- 1 c. AP flour
- 1 T. brown sugar
- ¼ t. baking powder
- ¼ t. baking soda
- ¼ t. salt
- 5 t. cold butter
- ⅓ c. buttermilk
- ½ c. raisins or currents
Steps
- In a small bowl, combine the dry ingredients (except raisins). Cut in butter with two forks or a pastry blender until crumbly.
- Combine egg & buttermilk; stir into crumble mixture until just moistened. Fold in raisins or currants
- Turn onto a lightly floured surface and kneed gently 6 to 8 times. Shape into a 5 inch round loaf. Place on a cookie sheet coated with cooking spray
- Using a sharp knife, cut a 1 inch cross about a ¼ inch deep on top of the loaf.
- Bake in 375 degree oven for 18 to 22 minutes or until golden brown. Cool on wire rack before cutting.
- Can double recipe for a larger loaf.
