Lemon and Yellow Squash Quick Bread
Made 9-12-24. Loaves sunk badly in the middle. Try decreasing sugar and i creasing flour, and adding a bit of water.
Ingredients

  • 2 ½ cups shredded yellow summer squash
  • 2 ¼ cups sugar
  • 2 teaspoons lemon zest
  • ¼ cup freshly squeezed lemon juice
  • 8 ounces (1 cup) unsalted butter, melted
  • 3 large eggs, room temperature
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • subheading: Lemon Glaze:
  • 1 to 2 tablespoons milk
  • 1 teaspoon light corn syrup
  • 1 ¼ cups confectioners' sugar
  • 1 tablespoon freshly squeezed lemon juice
