PAT’S PEAS AND SWEETCORN NO COUNT MINI QUICHE
Makes 8 large quiches
Ingredients
  • 300 gm tub natural cottage cheese
  • 4 large Eggs
  • 200 gm protein cheese  4 SPs
  • Defrosted frozen peas and sweetcorn 0SPs on No Count
Steps
  1. Whisk the eggs
  2. Add the cottage cheese and mix through
  3. Stir in the protein cheese
  4. Add the defrosted veg ( you can add it anything you want provided it’s a No Count ingredient
  5. Lightly grease 8 large muffin cases ( it would probably make 12 smaller ones )
  6. If using the Instant  Pot put 250 mls of water at the bottom of the inner pot Put the trivet in and as many quiches in as you can my size took 4
  7. Set to seal and cook on manual for 15 minutes
  8. QPR  and remove from the pot do the same to the remaining quiches
  9. Oven cook at 180 for about 20 minutes or until quiches are set
  10. IF YOU USE TOMATOES REMEMBER THIS WILL ADD LIQUID AS THEY COOK
