Chicken Pot Pie without the Pie by Rich Lum
Cooked in a TWO 6 qt IP on HP
Ingredients
  • 4 cups of homemade IP chicken broth. (I used frozen)
  • 2 carrots cubed
  • 2 celery cubed
  • 2 medium russet potatoes cubed
  • Leftover chicken ..deboned and cubed.( I used 2 thighs and 3 drums)
  • Salt and pepper to taste
  •  
  • Roux..to thicken the broth
  • 4 tablespoons butter, 4 tablespoons flour cooked together in a small saucepan
  •  
  • Pot In Pot White Rice ( I used a 7”x3” cake pan )
  • 2 cups of well rinsed rice
  • 2 cups of water
  • A pinch of salt
  • 1 capful of white vinegar
Steps
  1. Start the Rice
  2. Put 1 cup of water and a trivet  into pot 1
  3. Place the cake pan with the rinsed rice and water on top
  4. Close and seal your lid
  5. Set your pot to manual 12 minutes with a full NPR
  6. For the Chicken Pot Pie without the Pie
  7. Put the frozen broth into pot 2
  8. Close and seal your lid
  9. Set your pot to manual 0 minutes.. do a QR
  10. Add your chopped veggies to the pot
  11. Close and seal your pot
  12. Set your pot to manual 3 minutes...do a QR
  13. Open the pot and set it to sauté
  14. Stir in Roux until it reaches the desired thickness
