  • 4 oz (110 g) raisins

  • 4 oz (110 g) demerara sugar
  • 3 oz (75 g) chilled butter, cut into small dice
  • 6 oz (175 g) self-raising flour, sifted
  • 2 level teaspoons ground cinnamon
  • subheading: For the mascarpone vanilla cream:
  • 9 oz (250 g) mascarpone, at room temperature
  • 1 teaspoon vanilla extract
  • 7 fl oz (200 ml) fromage frais
  • 1 rounded dessertspoon golden caster sugar
