Crockpot Thai Chicken
Serve with whole grain pasta/rice or on a whole wheat bun.

Ingredients
  • 1 lb chicken breast
  • 1 to 6.57 fl oz bottle thai sauce of choice
  • 2 T red curry paste
  • 1 red bell pepper, chopped
  • ½ yellow onion, chopped
  • ½ pineapple, chopped
  • 2 cloves garlic
  • 1 T dried cilantro
  • 1 T ground ginger
  • 6 oz light coconut milk
  • 1 bag frozen edamame
  • 1 head broccoli, chopped
  • Green onions
  • Greek yogurt
Steps
  1. Add all ingredients, except for broccoli, green onions, and Greek yogurt to crockpot.
  2. Cook on low for 8 hours.
  3. Remove chicken, shred, and return to pot.
  4. Preheat oven to 350 degrees.
  5. Steam  broccoli in microwave for 4 minutes.
  6. Add broccoli to baking sheet and drizzle with olive oil, garlic powder, pepper, and minced garlic.
  7. Bake broccoli for 10 minutes.
  8. Serve thai chicken over ⅓ cup cooked brown rice or on 1 whole wheat role.
  9. Add broccoli to thai/rice bowl or serve on the side with sandwich.
  10. Enjoy!
