Chicken Burrito Bowl
Ingredients
  • 1 pound of boneless, skinless chicken breasts, cubed OR COOKED CHICKEN
  • 2 cups cooked rice (preferably long-grain or basmati) OR READY RICE
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup sweet corn kernels
  • 1 cup canned black beans, drained and rinsed
  • 2 cups shredded lettuce
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped fresh cilantro
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt and pepper to taste
