Chickpea Spinach Curry (Palak Chana)
Ingredients

  • water for soaking and cooking chickpeas

  • 8 whole cashews soaked and blended into smooth paste.
  • 2 tablespoons oil
  • ½ teaspoon cumin seeds
  • 2 green chilies
  • 4 peeled garlic cloves
  • 1 inch peeled ginger
  • ¾ cup chopped onions
  • 2.5 cups chopped spinach leaves
  • ½ cup chopped tomatoes
  • 2 cups tomato puree
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • 2 teaspoons garam masala powder
  • salt to taste
  • ¼ cup chopped cilantro leaves
  • Prepping and cooking chickpeas
