Cheesy Chorizo Croquettes
Ingredients
  • 125 g chorizo, finely chopped
  • 2 spring onions, thinly sliced
  • 475g tub Woolworths classic potato mash
  • ¾ cup finely grated parmesan
  • 2 free range eggs, 1 separated
  • 1 tbs smoked paprika
  • 2 cups panko breadcrumbs
  • 60 g mozzarella, cut into 1cm cubes
  • ¾ cup plain flour
  • ¼ cup Woolworths milk
  • vegetable oil, for deep-frying
  • ⅓ cup aioli
  • 1 tbs caramelised onion
  • continental parsley leaves, to serve
  • To cook these croquettes in an air fryer, set it to 150°C and preheat for 3 minutes. Cook half the croquettes for 10 minutes. Increase temperature to 200°C. Cook for a further 4 minutes or until golden and crisp. Repeat with remaining croquettes.
