- 1 cup canned black beans, rinsed and drained
- 1 sweet red bell pepper, finely chopped
- ½ red onion, finely chopped
- 1 mango, chopped
- 2 to 3 Tbsp fresh cilantro, chopped
- 1 jalapeño pepper, chopped
- 2 Tbsp toasted pepitas (pumpkin seeds) (optional)
- subheading: For dressing:
- 2 tsp olive oil
- 3 Tbsp lime juice ⅛ tsp ground cumin
- ¼ tsp chili powder
- ¼ tsp salt
