Healthy Spring Quinoa, Black Bean, and Mango Salad
Ingredients
  • 1 cup cooked quinoa (can buy frozen)
  • 1 cup canned black beans, rinsed and drained
  • 1 sweet red bell pepper, finely chopped
  • ½ red onion, finely chopped
  • 1 mango, chopped
  • 2 to 3 Tbsp fresh cilantro, chopped
  • 1 jalapeño pepper, chopped
  • 2 Tbsp toasted pepitas (pumpkin seeds) (optional)
  • subheading: For dressing:
  • 2 tsp olive oil
  • 3 Tbsp lime juice ⅛ tsp ground cumin
  • ¼ tsp chili powder
  • ¼ tsp salt
