Shrimp Primavera with Zoodles
Quick, Easy, Delicious

Ingredients
  • 2 large zucchini spiralized into noodles.
  • Approx. 1 lbs fresh or frozen cleaned raw shrimp.
  • 1 medium tomato cubed or about 10 to 12 cherry tomatoes halved.
  • 2 cloves minced garlic or 2t jar garlic
  • 1T extra virgin olive oil.
Steps
  1. In large pan (I used a wok) heat olive oil till shimmering.
  2. Add garlic and saute till golden.
  3. Add shrimp and stir until cooked, will be white and pink, not translucent (I tasted one to be certain).
  4. Add tomatoes and stir till they are hot, may make the liquid pink.
  5. Add in all the zucchini noodles and toss until slightly softened and coated with liquid.
  6. Plate and season with cracked pepper and parmesan cheese. Enjoy!!!
Notes
  • I used jar garlic and it wasn't as garlicky as I like, will use double or fresh next time.
  • I used medium tomato and will use twice the amount next time....probably cherry tomatoes.
