Apple Raisin Quick Bread
Ingredients
  • 1¼ c vegetable oil
  • 4 eggs
  • 4 tsp vanilla
  • 3 c all purpose flour
  • 2 ½ c sugar
  • 2 tsp cinnamon
  • 1 ½ tsp salt
  • 1½ tsp baking soda
  • 1 tsp ground cloves
  • ½ tsp baking powder
  • 3 c diced, peeled tart apples
  • ⅔ c chopped nuts
Steps
  1. Combine flour, sugar, cinnamon, salt, baking soda, cloves & baking powder. Set aside.
  2. In a mixing bowl beat oil, eggs & vanilla.
  3. Add flour mixture.
  4. Mix well.
  5. Stir in apples, raisins & nuts.
  6. Pour into two greased 9 in. x 5 in. x 3 in loaf pans
  7. Bake at 325* for 60 to 70 minutes or into a toothpick inserted in the center comes out clean. Cool for 10 min before removing from pans to wire racks.
  8. Or
  9. 6 mini loaf pans.  Bake at 325* for 45 to 50 minutes, or into a toothpick inserted in the center comes out clean.  Wrap with plastic wrap & tie with a bow to give as gifts.
