Ingredients
  • 4.5 cups (650 grams) all-purpose flour
  • 3 ½   teaspoons kosher salt
  • 2 ¼  teaspoons INSTANT yeast
  • 2 ¼ to 2 ¾ cups lukewarm water (warm to the touch but not hot)
  • Olive oil (around ½ to ¾ cup)
  • Flaky sea salt, for sprinkling on the dough (like Maldon)
  • a few springs of rosemary, leaves stripped off (optional)
