  • 1 large egg, beaten
  • ¾ cup grated Parmesan cheese
  • 1 pound Roma tomatoes (3 to 4 medium)
  • salt
  • 2 medium garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • ground black pepper
  • 8 ounces  low moisture whole milk mozzarella, shredded
  • 2 tablespoons finely shredded fresh basil leaves
