  • 200 grams button mushrooms (roughly chopped)
  • 1 small bunch of flatleaf parsley (chopped)
  • 120 grams basmati rice
  • salt
  • freshly ground black pepper
  • sour cream (to serve)

  • 1 tablespoon sunflower oil
  • 200 grams pancetta or bacon lardons
  • 1 clove of garlic (grated)
  • 2 large slices of dense rye bread (cut into cubes)
