Cream Cheese Spritz Cookies

Ingredients
  • 2 sticks cubed salted butter, cold from the refrigerator
  • 3 oz. cream cheese (softened)
  • 1 c. sugar
  • 1 egg yolk
  • 2 tsp. vanilla extract
  • 2½ c. all-purpose flour
  • ¼ tsp. salt
  • holiday sprinkles or pecans for decoration
Steps
  1. Cream butter and cream cheese together
  2. Add sugar, and beat to incorporate
  3. add egg yolk; beat until light and fluffy, then add vanilla and beat to combine
  4. In a separate bowl, combine flour and salt
  5. Gradually add dry ingredients to wet ones, beating until incorporated
  6. Load up a cookie press and press onto ungreased cookie sheets (do not use parchment or grease)
  7. Decorate with sprinkles, sugar or pecans
  8. Bake until golden brown on the edges - 13 to 15 minutes
  9. Cool on cookie sheets 5 to 7 minutes, then transfer to wire rack to continue cooling
  10. subheading: If press does not work:
  11. Add mixture to plastic wrap sheet and roll into a narrow log about 1.5 inches in diameter. Chill until easily sliced, then slice and bake.
Notes
  • Don't beat too much. Dough should be coolish so that the press works.
