Ingredients

  • ½ cup desiccated coconut
  • 1 cup raw
  • ¼ cup pure maple syrup
  • 1 Tbs melted coconut oil
  • 1 Tsp pure vanilla extract
  • subheading: Cheesecake layer:
  • 1 cup raw cashews (soaked overnight OR for 2 hrs covered with warm water), drained
  • 1 ¾ cup blueberries - fresh or frozen, (if frozen, defrost before using)
  • 2 Tbs fresh lemon juice
  • ⅓ cup melted coconut oil
  • ¼ cup pure maple syrup
  • 2 Tbs of Power Super Foods Elderberry Powder
