Baked Oatmeal
Modified from "A Well Watered Garden Cookbook"

Ingredients
  • 3 cups Quick Cooking Oats
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1½ teaspoon Cinnamon
  • 1 cup milk
  • ½ cup oil (or ¼ cup applesauce)
  • ½ cup sweetener (sugar, maple syrup, splenda...)
  • 1 teaspoon vanilla
  • 2 eggs
  • Fruit, nuts, coconut (optional)
Steps
  1. Preheat oven to 350°
  2. In a large bowl mix oats, baking soda, baking powder, salt, cinnamon, and optional fruit/nuts.
  3. In a separate bowl beat eggs. Add milk, oil or applesauce, sweetener, and vanilla. Add to oat mixture. Mix well.
  4. Bake in a 10" x 10" pan for 30 minutes.
Notes
  • Serve warm- goes well with yogurt and fruit.
  • We freeze portions, and thaw in microwave for a quick breakfast. Thawed potions also heat well in 350° oven fo ~10 minutes.
