Okra Beignets with Cilantro Sour Cream Sauce
Ingredients

  • 2 eggs
  • ½ cup heavy cream
  • 1 cup cake flour (all purpose)

  • ½ LB clean shrimp, rough chopped
  • 4 cups fresh okra, cut crosswise into thin pieces
  • 1 green bell pepper, cut into ¼-inch dice
  • 1 onion, cut into ¼-inch dice
  • 2 or 3 jalapeños finely chopped
  • About 6 cups vegetable oil for frying (1 ½ qt)

  • 2 ½ cup sour cream
  • 1 bunch chopped fresh cilantro
  • 2 limes
  • subheading: For Salsa:
  • 4 ripe plum tomatoes, seeded, chopped
  • ½ small red onion minced
  • 1 jalapeno minced
  • ½ bunch cilantro minced
  • ½ teaspoon finely grated fresh lime zest
  • 1 lime juiced
  • 1 Tb olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
