Rice—Chicken Rice, or Rice only. Marinate chicken after spice. Rice only—instant Pot

Ingredients

  • 1 cup Basmati, rinsed and drained
  • 1 small shallot chopped
  • 1 small carrot, chopped
  • subheading: Sauté in Instant Pot with:
  • 1 to 2T Olive oil
  • Until nutty scented, but not brown
  • subheading: Deglaze pan:
  • 2 cups chicken broth (water plus 2 tsp better than bouillon chicken J)
  • subheading: Add:
  • ½ tsp Salt
  • Pepper, light sprinkle
  • Allspice, pinch
  • Cardamom, pinch (substituted Za’atar J) see other subs below
  • subheading: Instant Pot:
  • 12 minutes on rice setting.
  • subheading: Add peas before serving:
  • Served with Fish. Shirazi. Broccoli.

  • 2 teaspoon ground allspice more for later
  • 1 teaspoon black pepper
  • ¾ teaspoon ground green cardamom more for later (used a pinch of Za’atar J)
  • ¼ teaspoon ground turmeric more for later

  • 6 boneless skinless chicken thighs
  • Kosher salt
  • Extra virgin olive oil
  • 1 cup chopped yellow onions, about ½ large onion
  • 2 carrots, chopped
  • 1 cup frozen peas
  • 1 cup cooked chickpeas or from canned chickpeas, drained and rinsed
  • 2 cups Basmati rice, rinsed well and soaked in water for 15 to 20 minutes and drained*
  • 2 cinnamon sticks
  • 1 dry bay leaf
  • 2 cups low-sodium chicken broth, boiling
