Chicken Piccata

Ingredients
  • 1 to 1.5 lb Chicken - cut into chunks
  • 1 to 2 Tbl Olive Oil
  • ¼ cup lemon juice
  • ½ cup white wine
  • 1 Tbl capers (I use more)
  • 1 Tbl corn starch
  • ½ cup chicken broth
  • Salt and pepper
  • Thin or angel hair spaghetti
Steps
  1. Start water boiling for pasta and add pasta when it’s time
  2. Cut up chicken into whatever size/shape you prefer
  3. Add oil to pan to keep chicken from sticking and cook chicken
  4. Add wine, lemon juice, and chicken broth (Reserve some chicken broth and make a slurry with cornstarch)
  5. Add slurry to pan and bring to simmer until it thickens up.
  6. Smush the capers and add
  7. Serve over pasta and add a veggie to the side!
