Dried Shiitake Mushroom Broth
Ingredients
  • 2 teaspoons neutral vegetable oil
  • 1 small onion, finely chopped
  • 1 to 2 cloves garlic, minced
  • 32-ounce container vegetable broth plus 2 cups water,
  • or 6 cups water with 2 vegetable bouillon cubes
  • 8 to 10 good-sized dried shiitake mushrooms
  • 1 to 2 tablespoons soy sauce or tamari, to taste
  • subheading: OPTIONAL EMBELLISHMENTS (CHOOSE 2 OR 3):
  • Diced tofu
  • Cooked Asian noodles
  • Thinly sliced scallion
  • Grated fresh daikon radish or turnip
