Ingredients
  • 2 large white onions, cut in half and sliced (6 cups)
  • 1 medium head of cauliflower, chopped into small florets (about 3 cups)
  • 4 to 5 medium carrots, sliced into disks (about 2 cups)
  • 1 large potato, cut into small cubes (2 cups)
  • 3 large fresh jalapeños, sliced into disks (about ¾ cup)
  • 8 to 10 garlic cloves
  • 15 to 20 peppercorns (1 tbsp)
  • 10 cloves (½ tsp)
  • 1 tsp dry oregano
  • 2 tbsp vegetable oil
  • ½ cup white vinegar
  • ½ cup water
  • salt to taste
