Looking for More Ways to Eat Eggs
Ingredients
  • 8 to 12 eggs, scrambled
  • 1 can Cream of Mushroom Soup
  • ½ tsp Worcestershire sauce
  • 1 Tbsp yellow mustard
  • 1 Tbsp mayonnaise
  • ¼ to ½ cup salsa OR a few dashes of hot sauce or Tabasco sauce
  • Up to 1 cup of shredded cheese, if you want it
  • Salt and pepper to taste
Steps
  1. If you want to do this in the microwave... Mix everything together thoroughly in a large, microwave safe bowl after coating the bowl in nonstick spray. Heat on medium high in your microwave, watching closely as the eggs will fluff up along the sides of the bowl. Using a spatula, stir the egg fluff back into the egg mixture and continue cooking. You'll need to do this several times, and it can take 15+ minutes to finish cooking.
  2. Honestly, it's easier and faster to do this in a nonstick skillet, stirring gently and frequently, until eggs are just set.
  3. This is amazing served with crisp, buttered English muffins. It's also yummy wrapped in a tortilla.
  4. You can also add more condiments or different ones, or opt for traditional herbs and spices instead (although the yellow mustard helps with color and the mayo makes for a silky texture). If you dislike mushrooms, any Cream of Whatever soup will do. It's ultimately all about your individual preferences and what you find in the fridge when you go to cook.
