Ingredients
  • 1 bone-in prime rib roast (5 to 7 pounds, 2.2 to 3 kg)
  • 8 cloves garlic, peeled and sliced
  • 4 whole sprigs fresh rosemary, chopped into small pieces
  • ½ of a yellow onion
  • 1 shallot
  • 4 whole sprigs fresh thyme, chopped
  • coarse salt and black pepper
  • 2 cups (500 mL) red wine
  • 4 cups (1 L) beef stock
