Shredded Brussels Sprout Caesar Salad
Ingredients

  • 1 teaspoon kosher salt

  • 1 cup grated parmesan cheese
  • 1 lb brussels sprouts washed end trimmed, and out layer removed (Note 2)
  • 1 head romaine lettuce or kale shredded
  • 2 large avocado peeled and diced
  • ½ cup chopped walnuts
  • ⅓ cup shaved parmesan sub more grated parmesan cheese
  • subheading: Parmesan Caesar Dressing:
  • ⅓ cup extra virgin olive oil
  • Juice from 1 lemon (about ¼ cup)
  • 1 Tablespoon dijon mustard
  • 2 Tablespoons tahini
  • 2 teaspoons Worcestershire sauce or coconut aminos
  • 2 cloves minced garlic
  • ½ teaspoon kosher salt
  • ⅓ cup grated parmesan cheese
